Keith Mahoney is a fantastic chef and his culinary skills are rivaled by very few chefs in America. However, Keith’s real strength lies in his ability to couple this great culinary skill with a firm understanding and management of the financial and personnel challenges of a restaurant.

I was hired by a private equity fund to turnaround troubled restaurant company whose flagship restaurant was located on the waterfront in Miami’s exclusive Brickell neighborhood. I retained Keith as the Executive Chef and charged him with creating a new concept and menu while simultaneously hiring the entire kitchen staff. We had just 28 days to re-concept and open the restaurant which had 327 seats.

Shortly after initiating the process, there became an acute need for a rebuild of the entire financial systems including cost analysis and revenue tracking. Leveraging his extensive experience, Keith was able to quickly create, customize, and implement systems he had over the years in working with various restaurants.

Keith soon assumed the role of managing the entire restaurant including the front of house.

The restaurant opened on time and was a great success. We were able to meet our goal of building a successful business and selling the company within our investment horizon. Keith’s participation in virtually every aspect of this project was invaluable.
